This recipe for marinated cucumbers is a southern favorite of mine. I remember my mama making these for us every summer. They are so easy, delicious, and fresh!
Make sure you slice your cucumbers, onions, and bell peppers thin. This time, I didn’t put bell peppers in mine since I didn’t have any on hand. It’s good with just the cucumbers and onions, so it just depends on your personal preference.
Salt the cucumbers and let them sit in the fridge for two hours to bring out the juices. After the two hours, rinse them thoroughly.
In a separate bowl, dissolve the sugar in the vinegar. Add mixture to the cucumbers and refrigerate. It is best to keep it in a mason jar, so that the cucumbers are fully submerged in the vinegar liquid. Allow cucumbers to marinate for 2-3 hours (best overnight) before eating.
